Healthy Swap Roasted Butternut Squash
How did sweet potatoes with marshmallows ever become a thing? Instead of that sugar-loaded monstrosity, why not go with J.J. Virgin's classic and elegant side dish? Plus, the cinnamon helps you balance your blood sugar, and is naturally sweet (not to mention delish).
Ingredients
1 butternut squash, peeled and cubed into 1-inch squares
2 tablespoon olive oil
1 tablespoon cinnamon
pinch salt
1/2 cup walnut halves, toasted
sprig fresh thyme, for garnish (optional)
Preparation
- Preheat oven to 400 F.
- Toss together all ingredients except the walnuts, making sure all the squash cubes are evenly coated with oil.
- Spread squash on a baking sheet and roast in the oven for 30 minutes until tender.
- Top with walnuts and garnish with fresh thyme.
