Warm Spinach Salad

Warm Spinach Salad


This is the perfect side dish to accompany Theresa's maple garlic pork tenderloin



2 tbsp extra virgin olive oil
2 cloves garlic , minced
1/2 tsp grated ginger root
1/2 cup fresh mushrooms , sliced
1 sweet red pepper, chopped
1/4 tsp pepper
1/4 cup apple cider vinegar
2 tbsp grainy mustard
3 tbsp water
1 package baby spinach


  1. Heat oil in a fry pan over medium heat.
  2. Add garlic and ginger and cook for one minute, then add mushrooms, sweet pepper and pepper.
  3. Whisk in cider vinegar, mustard and water.
  4. Divide salad into 4 serving plates. Spoon hot dressing over salad.

Serving Size: Serves 4
