Vegetarian Sloppy Joes

Ingredients

1 cup chopped onion, frozen
340 grams vegetarian ground round, original or Italian spice
2 cups jarred tomato sauce
1 cup chili sauce
2 cups kale or spinach, frozen
4 whole grain buns, toasted

Preparation

  1. Heat a sauté pan over medium-high heat. Mist with non-stick cooking spray and add onions. Cook, stirring, until translucent and fragrant, about 2 minutes.
  2. Stir in vegetarian ground round, tomato sauce and chili sauce. Heat until bubbling. Reduce heat to medium-low and simmer for 10 minutes, until thickened.
  3. Stir in kale and cook for about 2 minutes, until warmed. Scoop onto buns.
