Updated Spaghetti & Meatballs

As a hockey player and mom, Olympian Cassie Campbell is well aware of the importance of nutrition to an active lifestyle. (After all, she helped lead the Canadian women's hockey team to back-to-back gold medals in 2002 and 2006.) Nutritious and delicious, this quick and easy pasta fix is the perfect family fare before heading off to the rink.

Prep: 10 min
Total: 1 hr.
Yield: 6 servings, 2 cups (500 mL) each

1 lb. (450 g) extra-lean ground beef
1 egg white
1 onion, chopped, divided
1 cup fresh basil, chopped, divided
6 Premium Plus Whole Wheat Crackers, crushed (about 1/4 cup)
1/2 cup Kraft 100% Parmesan Light Grated Cheese, divided
1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
1 28-oz. can (796-mL) no-salt-added diced tomatoes, undrained
330 g whole-wheat spaghetti, uncooked

  1. Add enough water to fill a large skillet about 3/4 full. Bring to boil on medium-high heat.
  2. Meanwhile, mix meat, egg white and 1/2 cup each onions and basil, cracker crumbs and 2 tbsp cheese until well blended; shape into 42 3/4-in. balls.
  3. Place half the meatballs in boiling water; cook 7 min. or until meatballs are done.
  4. Remove meatballs with a slotted spoon; drain on paper towels. Repeat with remaining meatballs. Discard cooking water.
  5. Heat dressing in same skillet on medium heat. Add remaining onions; cook 3 min. or until crisp-tender, stirring occasionally.
  6. Add meatballs, tomatoes and remaining basil; stir to evenly coat meatballs. Bring to boil; simmer on medium-low heat 20 min. or until heated through, stirring occasionally.
  7. Meanwhile, cook spaghetti as directed on package, omitting salt.
  8. Drain spaghetti; place in large bowl. Add meatballs and sauce; toss to coat. Sprinkle with remaining cheese.

Kraft Kitchens Tip

  • For extra flavour, add 2 minced garlic cloves and 1 tbsp Worcestershire sauce to meat mixture before shaping into balls.

In 2002 and 2006, she lead the Canadian women's hockey team to back-to-back Olympic gold medals as captain. In 2006, she also became the first woman to provide colour commentary for CBC's Hockey Night in Canada and continues to bring her unique perspective to the broadcast. Now in it's seventh year, Kraft Hockeyville is proud to have her as one of its key ambassadors.
