Turkey Quinoa Black Bean Burgers


When you're trying to start the new year the right way, Chef Danny Boome suggest that we swap out a bad thing for a good thing and start from there! For these burgers, we're using low fat, high protein ground turkey mixed with the superfoods black beans and quinoa, and serving them on a toasted brioche buns with sharp cheddar cheese and arugula. This receipe gives you the right amount of good to go with a little bit of naughty.



1 lb ground turkey
1/2 cup cooked quinoa
1/2 cup cooked black beans
1/2 tsp ground sage
1/2 tsp paprika
to taste kosher salt and ground black pepper
6-8 small brioche buns, or slider sized egg buns
6-8 small slices sharp cheddar cheese
1 cup baby arugula


  1. In a large bowl, combine ground turkey, quinoa, black beans, spices, salt and pepper. Mix by hand until all ingredients are bound together.
  2. Set a griddle or skillet onto low to medium heat and add a teaspoon of olive oil.
  3. Take a small handful of the turkey mixture and form a large golf ball sized ball. Repeat 6 - 8 times. Take the ball and gently press down, the ball should shape itself into a slider-sized, one-inch-thick burger.
  4. Add burgers to the pan and cook on both sides until golden brown and cooked through, about 3 - 4 minutes per side.
  5. Add to toasted brioche buns with a slice of sharp cheddar cheese, a pinch of arugula, and serve!

Yield: Makes 6-8 slider sized burgers
