Turkey-Bison Burgers & Bean Salad
Serves 6-8
Turkey-Bison Burgers
1 cup oats, crushed (pulse in a food processor or blender until powdery)
1 tsp onion powder
1 tsp dried thyme
1 egg
1 tsp Worcestershire sauce
1/4 cup ketchup
1/2 cup unsweetened applesauce
salt and pepper, to taste
1/2 lb. ground turkey or chicken
1/2 lb. organic ground beef or bison
- In a large bowl, combine all ingredients save meat and mix well. Use a fork to delicately mix in meat. (Do not compress meat.)
- Divide mixture into 6-8 portions and pat gently into burgers.
- Grill or pan-fry until fully cooked.
Bean Salad
1/2 lb. green beans
2 tbsp extra-virgin olive oil
juice of 1 lime
sea salt
freshly ground pepper
28-oz. can white kidney beans
1 bunch radishes, sliced
fresh basil chiffonade
- Bring water to a boil in a saucepan. Snap ends off green beans (if fresh) and break in half into boiling water; cook 1 minute.
- Pour oil into a salad bowl and add lime juice and salt and pepper; mix in white beans.
- Drain green beans in a sieve and add to salad bowl, stirring so beans will absorb dressing while they are hot. Add radishes to salad bowl. Toss carefully to mix well.
- Garnish with basil leaves.
