Turkey-Bison Burgers & Bean Salad

Turkey-Bison Burgers & Bean Salad

Turkey-bison burger with grilled veggies and bean salad.

Serves 6-8

Turkey-Bison Burgers

1 cup oats, crushed (pulse in a food processor or blender until powdery)
1 tsp onion powder
1 tsp dried thyme
1 egg
1 tsp Worcestershire sauce
1/4 cup ketchup
1/2 cup unsweetened applesauce
salt and pepper, to taste
1/2 lb. ground turkey or chicken
1/2 lb. organic ground beef or bison

  1. In a large bowl, combine all ingredients save meat and mix well. Use a fork to delicately mix in meat. (Do not compress meat.)
  2. Divide mixture into 6-8 portions and pat gently into burgers.
  3. Grill or pan-fry until fully cooked.

Bean Salad

1/2 lb. green beans
2 tbsp extra-virgin olive oil
juice of 1 lime
sea salt
freshly ground pepper
28-oz. can white kidney beans
1 bunch radishes, sliced
fresh basil chiffonade

  1. Bring water to a boil in a saucepan. Snap ends off green beans (if fresh) and break in half into boiling water; cook 1 minute.
  2. Pour oil into a salad bowl and add lime juice and salt and pepper; mix in white beans.
  3. Drain green beans in a sieve and add to salad bowl, stirring so beans will absorb dressing while they are hot. Add radishes to salad bowl. Toss carefully to mix well.
  4. Garnish with basil leaves.
