Tosca Reno’s Paleo Loaf

Paleo loaf offers the mouth feel of bread without the ill effects of gluten since the flour that is used is sourced from almonds.

Ingredients

2 cups blanched almond meal
2 tablespoons coconut flour
1/4 cup chia seeds
1/4 cup flax seeds
pinch unrefined sea salt
1/2 teaspoon gluten-free baking soda
5 eggs, organic
1 tablespoon raw organic honey
1 tablespoon coconut vinegar, use apple cider vinegar if not available

Preparation

  1. Place almond meal, coconut flour, flax and chia seeds, sea salt and baking soda in medium bowl. Combine well.
  2. Place eggs, honey and coconut vinegar in separate medium bowl and beat until combined.
  3. Combine wet and dry ingredients. Don't overmix.
  4. Pour into prepared, greased loaf pan.
  5. Bake at 350 F for 35 minutes.
  6. Cool and serve.
  7. Store remaining in fridge.
