Thai-Inspired Slaw

Thai-Inspired Slaw

Serves 10

1 cup warm unreduced gastrique liquid
2 tbsp good olive oil
Some good mayonnaise
1/2 bunch of corriander
1 bunch basil
1 red onion, julienned
2 red peppers, julienned
1 carrot, thinly sliced in rounds
6-7 radishes, thinly sliced
1 head iceburg lettuce or 2 heads butter lettuce

  1. Wash and pick herbs and lettuce and set aside in a bowl.
  2. Place julienned veggies in another bowl and pour gastrique over top. Let stand 30 min.
  3. Strain vegetables and add to herbs and lettuce. Drizzle with good oil and season with salt and pepper. Add a little of the fully reduced gastrique to mix.
  4. Great on roast pork sandwiches (with lots o' mayo). Serve generously.
