Super Kale Chip Salad

Super Kale Chip Salad


This warm and crispy salad combines the nutritional powerhouses of kale and coconut oil.

1 head of kale
1/4 cup coconut oil, divided and melted
1/2 tsp garlic powder
1/2 tsp chili powder
1/4 tsp cayenne pepper
to taste salt and pepper


To make kale chips, de-rib the kale and chop into bite size pieces.

Place onto a 9x13-inch baking sheet and sprinkle over 2 tbsp. of coconut oil and salt and pepper. Bake at 350 F for 10-15 minutes until crisp.

In a wide sauté pan on medium-high heat, melt remaining coconut butter. Add spices and stir until combined. Toss kale chips briefly in pan and transfer to serving dish.
