Hemp Seed-Crusted Super Chicken Fingers


Joy McCarthy has come up with chicken fingers covered in nutritious hemp seeds that are sure to please your pickiest eaters!

2 lbs chicken breast, cut into strips
1 cup brown rice flour
1/2 cup gluten-free bread crumbs, (or whole wheat bread crumbs)
1/2 cup almond meal
3 tbsp hemp seeds
1/2 cup hard goat cheese
1 1/2 tsp sea salt
1 tsp dried thyme
1 tbsp dried basil
3 eggs


Preheat oven to 350 F.

Trim and cut chicken breasts into strips. 

Line a baking pan with parchment paper.

Pour all dry ingredients (except brown rice flour) into a large bowl and mix. In a separate bowl, whisk together eggs.

First dip chicken strips in brown rice flour, then into the whisked eggs and finally into the bread crumb mixture.

Place strips on baking sheet in rows and bake at 350 F for 20–25 minutes.

Let cool and serve.
