Sugar Cookie Fries

Sugar Cookie Fries

4 cups all-purpose flour, sifted
1 tsp baking powder
1/2 tsp salt
1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
2 large eggs
2 tsp pure vanilla extract
Coarse sugar for sprinkling as "salt"

  1. Sift flour, baking powder and salt into a bowl. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy.
  2. Add eggs one by one along with vanilla. Reduce speed to low.
  3. Gradually mix in flour mixture.
  4. Divide dough in half; flatten each half into a disk. Roll out dough between two pieces of parchment to 1/4 inch thick (about the height of your baby finger).
  5. Remove top layer of parchment paper. Cut out strips that look like fries with a pizza cutter or knife. Note: Cookies will expand so cut thin strips. Sprinkle coarse sugar on "fries" for a sea salt look.
  6. Refrigerate on a cookie sheet lined with parchment paper until firm, at least 1 hour or overnight. (You can pop them in the freezer for 30 minutes to speed up the chilling process.) Preheat oven to 325 F with racks in upper and lower thirds.
  7. Repeat with remaining disk of dough.
  8. Bake, switching positions of sheets and rotating halfway through, until edges turn golden, 12 to 15 minutes.
  9. Let sheets cool on wire racks. Serve with mini-hamburger cupcakes.
