Spicy Roasted Cauliflower: Vegetarian Game Day Snack

Matt Basile’s spicy cauliflower snack is perfect for the vegetarians coming to your game-viewing party and will have your carnivores converted.

Spicy roasted cauliflower by Matt Basile

Ingredients

1 head white cauliflower
1 head orange cauliflower
3 cups sriracha sauce
1 tablespoon olive oil
12 red Thai chilies
1 teaspoon cayenne pepper
1 tablespoon dried chilies

Dipping Sauce
1 English cucumber
2 cloves garlic
1/4 cup fresh mint, finely chopped
3/4 cup plain Greek yogurt

Preparation

  1. Preheat oven to 450 F. 
  2. Cut cauliflower in florets and place in a bowl. 
  3. Paint or toss the cauliflower in sriracha sauce.
  4. Toss in red Thai chilies and mix.
  5. Place the coated florets on a parchment lined rimmed baking sheet and drizzle with olive oil. 
  6. Bake for 25 minutes.
  7. Once baked, sprinkle with cayenne pepper and dried chilies. 
  8. Broil for an extra five minutes.

Sauce: 

  1. Peel and roughly chop the cucumber.
  2. Puree in a blender with garlic, mint and yogurt. 
  3. Serve alongside cauliflower.
