Tips: Add sparkling wine to the flute last, pouring slowly over the other ingredients to avoid an overflow. Stirring these cocktails is not usually necessary, but when you do, stir slowly and gently. For best results serve right away and use chilled glasses.

Kir Royale

If you want to take things up another notch the Kir Royale is an easy to make yet beautiful sparkling cocktail that replaces juice with sweet liquor called Crème de Cassis.

Ingredients

Sparkling Wine
Flute glass
Crème de cassis

Preparation

Pour 1 ounce of Crème de Cassis into a flute glass, top with sparkling wine, garnish and serve.

Sparkling Bourbon Cider

Ingredients

2 (oz) bourbon
1/2 cup apple cider
A few whole cloves
1 all spice
1 lemon juice
1 cinnamon stick
1 green or red apple

Preparation

Hollow out an apple.
In a pot, add apple cider, whole cloves, all spice, lemon juice and cinnamon sticks. Bring to a boil, then let it cool.v Add bourbon into apple.
Add cider mixture.

Pear Sparkler

This slightly sweet and sparkling pear cocktail has hints of vanilla and the depth of brandy.

Ingredients

1 vanilla bean
1/2 cup (125 mL) granulated sugar
2 Bartlett or Bosc pears, peeled
1 tbsp (15 mL) lemon juice
3 oz (85 g) pear brandy, such as Poire William
1 bottle (750 mL) sparkling wine, chilled

Preparation

Using paring knife, halve vanilla bean; scrape out seeds and add to sugar, rubbing with fingers to combine. Set aside in shallow dish.
Using small end of melon baller, scoop out pear flesh to make 18 balls; toss with lemon juice. Strain, reserving juice. Set aside.
Moisten rim of 6 chilled champagne flutes with reserved juice; press rim into vanilla sugar to coat.
Drop 3 pear balls into each glass. Pour 1 tbsp brandy into each; top up glasses with sparkling wine.

Sparkling Apple Cider Sangria

Ingredients

2 apples, peeled, cored and thinly sliced
1/2 cup cognac (or cointreau)
3 cups apple cider
750ml bottle dry sparkling wine or prosecco chilled
1/4 cup pomegranate seeds

Preparation

Add the apples to a large pitcher reserving about 1/2 cup for garnishing.
