Seared Scallops with Dragon Fruit Slaw and Golden Berry Salsa

Ingredients

12 scallops, adductor removed

Golden Berry Salsa
1 cup golden berries, quartered
1 cup tomatoes, seeded and chopped
1 tablespoon mint, freshly chopped
2 tablespoons olive oil
1 lime, juiced and zested
Dragon Fruit Slaw
1/4 red cabbage, shredded
1 jicama, julienned
2 dragon fruit, cut into batons
1/2 lemon, juiced and zested

Preparation

Golden Berry Salsa

Prepare golden berries, tomatoes and mint. In a bowl, toss together with olive oil, lime juice and zest, salt and pepper. Set aside until scallops are cooked.

Dragon Fruit Slaw

  1. Thinly shred red cabbage.
  2. Julienne the jicama and make batons out of it.
  3. Toss together in a bowl with lemon zest and juice.
  4. Add olive oil, salt and pepper to taste.

Seared Scallops

Season scallops with salt and pepper and sear in a pan for 1-2 minutes per side (until lightly browned). Do not overcook.

To Serve

Plate the meal on a long rectangular plate or board. Place slaw on the bottom, add seared scallops on top, and garnish scallops with the golden berry salsa.
