Roasted Haricots Verts with Garlic and Mint
Laura Calder's roasted green beans are the perfect side dish for a Parisian-inspired dinner party. Don't be afraid to cook these beans until they are shivelled and starting to crispen, it will all come out in the flavour.
Ingredients
1 pound thing green beans, trimmed
8 garlic cloves, peeled and quartered lengthwise
About 20 fresh mint leaves, torn
2 to 3 tablespoons olive oil
to taste salt and pepper
Preparation
- Preheat oven to 375°F.
- Toss all of the ingredients together on a baking sheet, then spread out in a single layer.
- Bake, without stirring, until the green beans are slightly shrivelled and starting to crispen, about 20 minutes.
- Serve.
