Ian Hemphill used this 21-spice blend in his Moroccan Chicken Bastilla. Despite the number of spices, Ras el hanout is not overpowering at all, and is worth a try! It can be used in tagines or casseroles, and is perfect for a quick seasoning over veggies and chicken.

A tray filled with over 20 different spices. Only 18 are seen in the picture and they are colourful.

Ingredients

15 whole saffron stigmas
5 tsp sweet paprika
4 tsp ground cumin
4 tsp ground ginger
2 tsp ground coriander seed
1 tsp cassia
1 tsp ground turmeric
3/4 tsp fennel seed
3/4 tsp allspice
3/4 tsp ground green cardamom seed
3/4 tsp whole dill seed
3/4 tsp ground galangal
3/4 tsp ground nutmeg
3/4 tsp ground orris root
1/4 tsp ground bay leaf
1/4 tsp ground caraway seed
1/4 tsp cayenne pepper
1/4 tsp ground cloves
1/4 tsp ground mace
1/4 tsp ground cubeb pepper
1/4 tsp brown cardamom pod

Preparation

Combine all ingredients in a bowl and stir well.

Transfer to an air-tight container and store away from extreme heat, light and humidity.

Good for up to one year.
