Potato Latkes
Zane Caplansky's latke recipe is great for Hanukkah but also for snack, brunch, dinner...basically anytime, they are that good!

Ingredients
3 pounds potatoes
1/4 cup matzo meal or all purpose flour
1/2 pound white onion, fine dice
3 eggs
1 tablespoons schmaltz (chicken fat)
2 teaspoons salt
2 teaspoons pepper
garnish chopped chives
garnish sour cream and apple sauce
Preparation
- Grate half the potatos and puree the rest in a food processor.
- Drain as much water as possible by squeezing by hand or in a cheese cloth.
- Grate the onion.
- Beat eggs.
- Mix all ingredients together.
- in a cast iron pan, heat 2 tablespoons schmaltz (chicken fat) and 1 tablespoon oil (olive, canola, peanut) on medium heat.
- When hot drop enough latke mix to make 2 in latkes.
- Fry till golden. Flip.
- Should be crispy on the outside and soft inside.
- Drain excess oil with paper towel on plates.
- Serve hot with apple sauce and sour cream.
