Potato Chip Chocolate Squares

Fun fact: Miss Vickie and her husband concocted this recipe one night to squash their sweet and salty cravings.
Ingredients
1/2 cup unsalted butter
1/4 cup granulated sugar
6 tablespoons unsweetened cocoa powder
1 egg, beaten
1 1/2 cups crushed potato chips with salt
1 cup finely shredded, unsweetened coconut
Preparation
- Melt the butter, sugar and cocoa in a very heavy saucepan on low heat. Stir in the beaten egg to cook and thicken mixture.
- Remove from the heat.
- Stir in the crushed potato chips and coconut.
- Pat mix onto a greased 8x8 inch pan and press down with your fingers to spread evenly.
- Refrigerate for 30 minutes and then cut into squares.
Yield: 12 squares
