A white plate filled with Miss Vickie's potato chip chocolate squares. They are garnished with blueberries, raspberries, coconut shavings and a mint leaf.

Fun fact: Miss Vickie and her husband concocted this recipe one night to squash their sweet and salty cravings.

Ingredients

1/2 cup unsalted butter
1/4 cup granulated sugar
6 tablespoons unsweetened cocoa powder
1 egg, beaten
1 1/2 cups crushed potato chips with salt
1 cup finely shredded, unsweetened coconut

Preparation

  1. Melt the butter, sugar and cocoa in a very heavy saucepan on low heat. Stir in the beaten egg to cook and thicken mixture.
  2. Remove from the heat.
  3. Stir in the crushed potato chips and coconut.
  4. Pat mix onto a greased 8x8 inch pan and press down with your fingers to spread evenly.
  5. Refrigerate for 30 minutes and then cut into squares.

Yield: 12 squares
