Nutritionist Peggy K loves whipping up these delicious maple walnut ice cream sandwiches that are actually good for us. These yummy treats are gluten-free and stress-busting, so go ahead and enjoy!

Peggy K's Gluten-Free Ice Cream Sandwiches

Ingredients

1 cup walnut butter
1/2 tsp cinnamon
1/2 cup maple syrup
2 Tbs ground chia (mixed with 1/3 c water)
1 cup 100% rolled oats*
1 cup coconut flakes, unsweetened
1/2 cup chocolate chips
1/3 cup walnuts, chopped/crushed
pinch sea salt

Directions

Pre-heat oven to 350. In a large bowl, mix walnut butter, chia mixture cinnamon, maple syrup, pinch sea salt until well combined, then mix remaining ingredients.

You might want to get in there with your hands to ensure it's well combined and dough-like.

Roll into golf-size balls in your hands, then press flat onto cookie sheet lined with parchment paper or greased with coconut oil. Smooth top and form into rounds. Bake until golden, about 20 minutes. Let cool completely before eating.

Banana Walnut Ice Cream

4 very ripe bananas, frozen
½ teaspoon ground cinnamon
2 Tbs maple syrup
¼ cup crushed walnuts

Blend frozen bananas and cinnamon until ice cream consistency is formed. Transfer to a container and stir in walnuts and maple syrup. Keep in the freezer until needed.

Optional: Roll ice cream in mini chocolate chips or crushed walnuts.
