Pad Thai Fries
Matt Basile has created the ultimate side dish in these Pad Thai Fries. Make these for a party but really you will want to eat them all yourself!
Ingredients
2 cups salted butter
3 cups Sriracha sauce
1 cup lemon juice
1 large bag (1 pound) oven fries
1 cup bean sprouts
1 cup cilantro
4 limes
1/4 cup crushed peanuts, optional
Preparation
- Melt the butter in a pan over high heat. Stir in the Sriracha sauce and lemon juice.
- Turn down the heat to low and cook for 5 minutes, or until the sauce is a nice velvety orange colour.
- Let the sauce cool and congeal so when you apply it to your fries it's more of a paste than a sauce.
- Deep fry fries in fryer or deep dutch oven at 360F for 5-6 minutes or until they are golden brown and crispy. (If you do not have a fryer, bake in oven at package directions)
- In a large bowl, toss the cooked fries in the sauce.
- Transfer the coated fries to a serving dishand top with bean sprouts, cilantro and lime wedges and crushed peanuts.
