Maple Habanero Turkey Wings

Maple Habanero Turkey Wings


Supersize your wings with Matt Basile's recipe for maple habanero turkey wings. Matt chose turkey wings over chicken wings because they are larger meaning less will fill your guests up.

1/4 cup + 2 tablespoons canola oil
6 turkey wings (3 drums, 3 flats, separated)
4 carrots, large
2 Spanish onions
1 teaspoon fresh thyme
6 cups chicken stock
2 tablespoon + 1 1/2 teaspoons kosher salt
5 habanero peppers
6 cloves garlic
2 lemons
1/2 cup rice vinegar
1 1/2 cups maple syrup
pinch black pepper


  1. Pre-heat oven to 275 F.  
  2. Heat two tablespoons of canola oil in a non-stick pan on high heat.
  3. Sear wings until golden brown on each side. 
  4. Add wings to a roasting pan along with carrots, onions and thyme. 
  5. Add chicken stock or water and two tablespoons of salt into the roasting pan.  
  6. Cover with parchment and tin foil and bake for three hours, or until the meat is fall-off-the-bone tender. 
  7. While the wings are braising make the sauce. Puree together habanero peppers with garlic, lemon flesh and white vinegar in a food processor or blender. 
  8. Thicken sauce with remaining quarter cup of canola oil while the machine is running. Then add maple syrup while machine is still running.
  9. Once the wings are braised, give them a second sear for three to four minutes per side. 
  10. Season wings with salt and pepper. 
  11. Plate the wings and brush with maple habanero sauce.
