Mango Kulfi


Chef Vikram Vij shows us his recipe for a traditional Indian frozen dessert that will be sure to refresh you on a hot day!

Bowl of mango kulfi (an Indian frozen treat).


1 cup whipping cream
6 cups whole milk
1 tbsp rice flour
4 tbsp sugar
3/4 cup mango pulp
1/3 cup chopped pistachios


  1. In a heavy pot combine cream, milk and rice flour with a whisk until smooth.
  2. Bring to a slow boil on medium-low heat, stirring regularly.
  3. Once the mixture starts to boil, reduce the heat to low. Cook for 45 minutes, stirring regularly and scraping the milk that sticks to the side of the pot back into the mixture. As it cooks, the mixture will begin to thicken.
  4. When it is cream-coloured and has the consistency of whipping cream, turn off the heat and stir in sugar.
  5. Set aside to cool for 15 minutes. Stir in mango pulp (and pistachios if desired).
  6. Pour a half cup of the mango-kulfi mixture into each of eight ceramic bowls or ramekins.
  7. Cover each bowl or ramekin with plastic wrap and freeze for at least six hours or up to 24 hours.
  8. To serve: Remove the kulfi from the freezer about five minutes before serving.
