Simple Lemon Drop Cookies
A little lemon zest and shredded coconut go a long way in this recipe. These cookies are perfect for a gift or a party!
Ingredients
1 recipe Anything Goes Cookie Dough , get the recipe here.
2 tablepsoons grated lemon zest
1 1/2 cups unsweetened shredded coconut

- Prepare Anything Goes Cookie Dough and stir in two tablespoons of lemon zest.

You can make the cookies two ways.
- Variation 1: Mix the dough and coconut. Roll the dough into one-inch sized balls.
- Variation 2: Shaped dough into one-inch balls. Layout the shredded coconut on a parchment sheet and roll the dough ball on top until they are covered.
- Arrange balls on to un-greased baking sheets two-inches apart.
- Bake for seven minutes or until edges are golden.
- Cool sheets for two minutes on wire rack then remove cookies from sheets and cool completely.
