Low-Fat Italian Caesar Salad
Chef Daniel Mezzolo shares the proper way to make a caesar salad without all of the fat! Serve as the perfect side dish to his extra-tasty prosciutto pizza.
Ingredients
1 tablespoon minced garlic
1/2 cup extra virgin olive oil
1/4 cup parmesan cheese, finely grated
1 lemon, juiced
to taste salt and pepper
2 cups croutons
1 head romaine lettuce, washed, torn bite sized pieces
Preparation
- Whisk together olive oil garlic, parmesan cheese, lemon juice and salt and pepper.
- Tear lettuce and add croutons to a large serving bowl. (Tip: Use store-bought croutons or rip day old bread into bite sized pieces. Toast in oven with a drizzle of oil and sprinkle of salt and pepper until browned.)
- Drizzle over dressing and toss. Enjoy!
