Healthy Dinner: Zucchini Pasta with Meatballs
Eating clean for dinner has never tasted better! Fitness Expert Lyzabeth Lopez shares her recipe for zucchini pasta and meatballs from her Classic Eating Plan. Best of all, because the pasta and bread crumbs are replaced with zucchini and almond flour, this dinner is gluten-free.
Ingredients
Zucchini Pasta
1 zucchini, medium size1 teaspoon extra virgin olive oil (or unsalted butter)
1/2 teaspoon salt, or to taste
1/2 teaspoon dried dill, optional
to taste freshly ground pepper
Healthy Meatballs
1 1/2 pound extra lean ground turkey or extra lean ground beef1 tablespoon oregano
1 tablespoon parsley
2 cloves minced garlic
1/4 cup onions, chopped
2 tablespoons almond flour
1 egg, organic
pinch salt
pinch pepper
Preparation
Zucchini Pasta
- Cut the ends from each of the zucchinis and put the zucchini through a zucchini noodle maker.
- Heat the olive oil or unsalted butter in a large pan.
- Add the zucchini spaghetti, salt, pepper and dill. Quickly sauté́ the zucchini until crisp-tender (it will cook fast, in less than five minutes).
- Taste and adjust the seasonings to your preference.
- Serve twirled onto the plate (or continue with meat ball recipe).
Healthy Meatball Recipe
- Pre-heat oven to 400 F.
- In a medium bowl, mix all ingredients well.
- Using an ice cream scoop, scoop meat balls onto a baking sheet coated lightly with olive oil.
- Pop into oven and bake for 20-25 minutes or until golden brown. Make sure the balls are cooked all the way through.
- Add low-sugar tomato sauce and healthy meatballs to the zucchini pasta.
