Guilt-Free BBQ Chicken Wrap

6 oz. boneless, skinless chicken thighs (or breasts or firm tofu)
1 tsp grapeseed oil
3/4 cup frozen corn
2 tbsp barbecue sauce
1/2 cup roasted red pepper
2 whole-wheat tortillas
6 romaine lettuce leaves or 2 cups mixed greens
1 tbsp part-skim-milk cheese

  1. Warm a skillet over medium heat while you chop chicken/tofu.
  2. Heat oil. Add thawed and drained corn, stir.
  3. Add barbecue sauce and chopped roasted red pepper.
  4. Place tortillas on plates and top with greens, divide chicken and corn mixture and top with cheese.
  5. Wrap and serve with salad.
