Refreshing Ginger Lime Juice

This popular South Indian drink is perfect for those hot summer days when you need something fresh!

Ingredients

2 cups water, boiled
1 inch piece ginger, grated
handful fresh mint leaves, divided
1 cup freshly squeeze lime juice
8 cups cold water
3/4 -1 cup liquid honey
pinch sea salt
ice cubes for serving

Preparation

  1. Steep ginger and a few sprigs of mint in boiled water for 20 minutes. 
  2. Strain boiled ginger water into a large pitcher.
  3. Combine remaining ingredients and stir well to dissolve honey.  Add more honey according to your preference.  
  4. Pour into glasses filled with ice, garnish with mint leaves and enjoy!
