Fibre-Rich Detox Bean Salad
This tasty salad is high in fibre, which helps digestion and cleanses your body.
Ingredients
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) chickpeas , drained and rinsed
1 red pepper, diced
3 carrots, diced
3 celery ribs, diced
1/2 red onion, diced
1/3 cup fresh cilantro, chopped
1/4 cup extra virgin olive oil
3 limes, for juice
1 teaspoon ground cumin
to taste cayenne pepper
to taste sea salt
Preparation
Step One: Dressing
Whisk extra virgin olive oil, lime juice, cumin, cayenne and sea salt in a bowl until blended.
Step Two: Salad
- Add the rest of the ingredients and the dressing to a bowl and toss!
- Refrigerate for a couple hours before serving to get all the flavours mixed together.
- Taste and adjust the seasoning as needed.
