English Muffin Breakfast Pizza
Who doesn’t love pizza for breakfast? Make this easy and healthy homemade version shared by Brandie Weikle by using tomato slices and ditching the dough in favour of English muffins. Then add some much-loved breakfast ingredients for a super-tasty meal. Looking for another interesting flavour combination? Try a little pesto, thinly sliced red onion and crumbled feta.
Ingredients
8 breakfast sausage rounds
4 English muffins, split in half
8 thin tomato slices
4 hard-boiled eggs, each peeled and cut into 6 wedges
1/2 cup mozzarella cheese, grated
1 tsp dried oregano
pinch pepper
Preparation
- Preheat oven to broil.
- Flatten sausage rounds to the size of the English muffins with your palm or a plastic wrapped rolling pin (rounds should be a bit bigger than the surface area of the English muffins). Heat a non-stick frying pan over medium heat and cook rounds about 4 minutes per side (they will continue to cook through under the broiler).
- Toast the 8 English-muffin halves, then place on a sheet pan.
- On top of each half English muffin, layer a sausage round, a tomato slice, 3 hard-boiled egg wedges and some grated mozzarella. Sprinkle with oregano and pepper.
- Broil 3–5 minutes or until the cheese melts. Serve immediately.
