Dr. Ali’s Middle Eastern Salad

Makes 4 servings

Ingredients
1 cup Israeli couscous
2 tomatoes
2 english cucumbers
1 red onion
20 pitted kalamata olives
1 can chick peas (low salt) drained and rinsed
1/3 cup balsamic vinegar
2 T olive oil
Juice of 2 lemons
1 cup fresh mint, chopped
Salt and pepper to taste
Directions
Prepare coucous as per package instructions. Rinse with cool water. Dice all vegetables into bite sized pieces. Place into a large container with lid. Add chick peas, vinegar, olive oil, lemon juice, and mint. Place lid on container and shake.
