Creamy Calabrese and Sun-Dried Tomato Pasta

Creamy sun-dried tomato pasta


400 grams pene rigate, cooked according to package instructions
8 slices Calabrese salami, cut in thin strips
4 whole sun-dried tomatoes, cut in thin strips
1 tablespoon olive or sundried tomato oil
1 cup 35% cream
3 sprigs parsley, finely chopped
half lemon, juiced
to taste salt and pepper


  1. Add 400 grams of pasta to salted boiling water. Cook according to package instructions. Reserve pasta water.
  2. In a large pan heat one tablespoon of olive or sundried tomato oil.
  3. Add Calabrese salami and sun-dried tomatoes, stir until warmed through.
  4. Add cream, pasta water, and stir.  
  5. Add pasta and toss to coat with sauce.
  6. Squeeze in lemon juice, add chopped parsley and give one last toss and serve hot.
  7. Season with salt and pepper to taste.
