Fool-Proof Classic Omelette

Chef Joshna Maharaj throws it down in the kitchen and challenged Steven and Chris to compete in an omelette duel together. While Steven ended up winning the match with his technique, Chef Joshna shares her fool-proof tips for winning omelettes every time!

Ingredients

3 eggs
splash milk
to taste salt and pepper
1 tablespoon butter
1 cup cut quick cooking vegetables and meats, bite sized and diced
1/2 cup grated cheese, like cheddar, mozzarella, goat cheese, etc.

Preparation

  1. Whisk eggs and milk together in a bowl, making sure to fully combine. 
  2. Season with salt and pepper.
  3. Melt butter in a six inch non-stick pan to fully coat the bottom. 
  4. Pour in eggs, swirling so they reach all edges.
  5. Use a rubber spatula to loosen edges. Drag the rubber spatula through middle of pan and swirl eggs again. 
  6. When bottom is cooked, add filling to one half. Sprinkle on desired cheese.
  7. Cook for about a minute and make sure to choose quick cooking vegetables and fully cook raw meats before adding to the omelette.  If using dense vegetables, blanch for 30 seconds in boiling water and drain before adding. 
  8. Fold over or roll omelette and transfer to a plate. 
  9. Serve with a side salad.
