Chili and Garlic Broccoli by Chef Rodney Bowers

1 medium bunch broccoli, cut into florets, about 6 cups
2 cloves garlic, sliced
2 tbsp olive oil
pinch chili flakes, to taste
to taste salt and pepper

  1. Steam broccoli: Bring 3/4 to 1 inch of water to a boil in a saucepan with a steamer. Add the broccoli to the steamer and cover. (If you don't have a steamer, you can put the broccoli directly into an inch of boiling water, cover and simmer until done.) Reduce heat to medium and let cook for 5-6 minutes. As soon as it is broccoli can be pierced easily with a knife, remove from heat.
  2. Meanwhile, in a medium saucepan, heat olive oil. Gently sauté sliced garlic and chili, until garlic just barely turns light golden. Add steamed broccoli and stir to combine. Season to taste with lemon juice, salt and pepper.

Yield: Serves 4
