Cherry and Almond Tart


This easy and elegant tart recipe from Joanna Tymkiw is great for a spring dinner party.


1 sheet frozen puff pastry, thawed in fridge
2 eggs
3/4 cup sugar
1/2 teaspoon almond extract
1 cup ground almonds
pinch salt
1 lemon, zested
1/2 cup melted butter
1/2 cup all-purpose flour
2 cups frozen cherries, thawed
garnish icing sugar and fresh mint


  1. Pre-heat oven to 400 F
  2. Unroll puff pastry onto lightly floured surface.
  3. With a rolling pin, roll out pastry just enough to cover the pan and trim off any excess.
  4. Add to fridge to cool preparing other ingredients.
  5. Meanwhile, whisk eggs, sugar, ground almond, extract, lemon zest and salt until combined before whisking in melted butter.
  6. Stir in flour until just combined.
  7. Pour over pastry before using back of spoon to help distribute over bottom of skillet. 
  8. Top with cherries and softly press into almond mixture to adhere.
  9. Bake for 40 minutes or until top is golden and puffed.
  10. Let cool and top with icing sugar and chopped mint before serving.
