Chef Kyla’s Favourite Lemon Curd Tarts


Chef Kyla shows us her favourite recipe for lemon curd filling, perfect for pies and tarts. With a few simple tips from Kyla, this recipe is great for any timid bakers and will sure to be the hit of any party's dessert table.



4 large egg yolks
1/4 cup + 1 tbsp lemon juice, freshly squeezed
1 lemon, zested
1/2 cup sugar
pinch salt (fleur de sel or kosher salt)
5 tbsp butter, cold and cubed

Kyla's Easy Pie Crust
1/2 cup cold lard (or shortening)
1 1/2 cups all purpose flour, extra for dusting
1/2 tsp salt
2/3 cup ice cold water
1 tsp white vinegar


  1. Combine yolks, juice, and sugar in a heavy-bottom saucepan; whisk to combine.
  2. Cook over medium-high heat, stirring constantly with a wooden spoon (be sure to scrape the sides of the pan), until the mixture is thick enough to coat the back of the spoon, 8 to 10 minutes, and registers 160 degrees on an instant-read thermometre.
  3. Remove saucepan from heat. Add lemon zest, salt and butter, one piece at a time, stirring until smooth. Transfer to a wide bowl.
  4. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming.
  5. Refrigerate until chilled and set, at least one hour or up to one day.
The Crust
  1. In a food processor, combine lard, flour and salt until mixture resembles oatmeal.
  2. Combine ice water and vinegar. Slowly add liquid to food processor until dough starts to clump together.
  3. Transfer dough to smooth surface that has been dusted with flour and form into a ball by hand. (Note: pie dough should have the texture of marble and feel like soft skin).
  4. Roll dough into a large disc to fill a 10-inch pie dish. Pinch edges to form a fluted pattern.
  5. Brush with cold milk or egg white if you like your pastry to shine when baked.
  6. Chill or freeze overnight in an airtight container. Fill and bake as per filling instructions. Especially delicious with Kyla's lemon curd!
