Brownie Ice Cream Sandwiches

Brownie Ice Cream Sandwiches


Kary Osmond turns her easy and delicious one pot brownie recipe into an ice cream sandwich. A great dessert to have in the freezer when hungry kids or unexpected guests arrive.



1 cup butter, melted
1 1/2 cups cocoa powder
2 cups sugar
1 teaspoon vanilla
4 eggs
1 cup flour
pinch salt
1 cup chopped walnuts


  1. Adjust oven rack to the middle position.
  2. Preheat oven to 350°F.
  3. Grease an 8-inch square baking pan, or line it with aluminum foil and grease the foil. Set aside.
  4. Melt butter in a large pot over low heat. Remove from heat, whisk in cocoa powder, sugar, and vanilla. 
  5. Beat in eggs, one at a time, until fully incorporated.  
  6. Fold in flour and nuts until combined.
  7. Transfer mixture greased 8 by 8-inch pans and bake for 20 to 25 minutes, or until the middle is just barely set.  
  8. Remove and allow to cool completely in the baking pan on a rack.  
  9. Using 500 ml of ice cream that has been softened, spread acoross one brownie, let chill in freezer for 10 minutes until adding second brownie as lid.
  10. Let freeze for 2 hours before cutting.
