Bacon-Wrapped Sausage with Bacon Coleslaw


Can't get enough bacon? Chef Lynn Crawford uses everyone's favourite ingredient to make dinner time a little more fun. A juicy bacon-wrapped sausage is sure to be a hit with a bacon slaw that will have everyone asking for more.

Bacon-wrapped sausage


For bacon-wrapped sausages
4 smoked polish sausages
8 strips smoked bacon
4 egg buns, (length of sausage)
For bacon coleslaw
4 strips bacon, cut into lardons
1/4 red cabbage, shredded
1/4 green cabbage, shredded
1 granny smith apple, julienne
1/2 red onion, thinly sliced
1/2 lemon, juiced
1/2 orange, juiced
2 tablespoon bacon jam
to taste salt and pepper


For bacon-wrapped sausages

  1. Preheat oven to 375 F.
  2. Wrap two pieces of bacon around each sausage to fully cover.
  3. Transfer to tin foil lined baking sheet with roasting rack on it.
  4. Bake for 30 minutes, turn over to evenly cook bacon.
  5. Broil each side for 2 minutes to get bacon crispy.
  6. Serve in a long egg bun and top with bacon slaw.

For bacon coleslaw

  1. Cook bacon on a medium high skillet until crispy.
  2. Add bacon jam to pan and allow to melt.
  3. Add all other ingredients in pan and toss to combine.
  4. Cook for a few minutes until produce is slightly wilted.
  5. Serve slaw warm or on top of a bacon wrapped sausage on a bun.

Yield: serves 4
