Bacon Jam with Brussels Sprouts and Radicchio

Matt Basile's bacon jam brussles sprouts will have you begging for more. Keep bacon jam ready in the fridge and you can whip these up in no time!

Roasted brussels sprouts and radicchio in a black and white striped paper bowl.

Ingredients

12 brussels sprouts
splash olive oil
1 head radicchio lettuce, tear leaves off of head
2 tablespoons bacon jam, see recipe
1 lemon, juiced
4 oz grated parmesan cheese

Preparation

  1. Trim brussels sprouts and halve and quarter.
  2. Add sprouts to to hot pan with olive oil.
  3. Cook for 5 to 6 minutes, or until slightly browned.
  4. At this point add in radicchio and toss, cook for approx 2 minutes.
  5. Add bacon jam and stir it around the pan so it begins to melt.
  6. Once everything is warmed and melted through take off heat.
  7. Squeeze over lemon juice, and grate over parmesan cheese.
  8. Serve immediately.
