Bacon Jam


Matt Basile describes this jam as "a bacon accessory that you can pair with almost anything," including burgers, sandwiches, brussels sprouts or just go for it and eat it with a spoon!

6 pounds double smoked bacon slab
4 spanish onions, thinly sliced
splash canola oil
4 cups soy sauce
2 cups brown sugar


  1. Cube the slab of bacon into 1/2 inch thick cubes.  
  2. Some of the pieces will be nice and fatty and some will be all meat.  
  3. It's important to use a slab of bacon from the butcher rather than strip baon that is pre packaged.
  4. Cook the cubed bacon in a large saucepan over high heat for 5 to 6 minutes or until crisp.  
  5. Turn down the heat and ladel out some of the exess fat.
  6. In a seperate pan  cook the onions with oil for 6 minutes, add soy sauce and cook without stirring for 10 minutes.  
  7. Transfer the onions to pan with bacon.
  8.  Add brown sugar and stir well.  
  9. Turn heat down to low and cook for 2 hours monitoring every 10 minutes to make sure no burning is occuring.
  10. Once cooked, let cool and puree in food processor for until smooth.  
  11. Store in the fridge to fully jammify!
