Zane Caplansky’s Homemade Applesauce


This full-flavoured applesauce is perfect for brisket, latkes or just for the heck of it!

2 litres apples, peeled and cored
1/2 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon lemon juice
1/4 teaspoon cloves
pinch salt


  1. In a large pot, simmer apples on low heat until soft.
  2. Purée until smooth with immersion blender.
  3. Test the seasoning after blending and adjust if necessary.
  4. Serve with latkes or alone.
  5. Double check for any apple chunks when portioning for storage in litre containers.
