Steak with Parsley and Caper Salad


Chef Chris Brown’s elegant steak salad can be made in a snap for a last minute dinner party.

2 cups frisée lettuce
2 cups fresh flat leaf parsley, picked
4 small shallots, thinly sliced
1/4 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 tablespoons drained capers
2 strip loin steaks
to taste coarse gray sea salt
to taste freshly ground black pepper


  1. Cook steaks in a cast iron pan for 3-4 minutes each side on med-high heat.
  2. Let rest for 10 minutes.
  3. Toss parsley, frisée, shallots, oil, lemon juice, and capers in a medium bowl to coat.
  4. Season salad to taste with gray sea salt and pepper.
  5. Cut steak against the grain into quarter inch pieces.
  6. Add steak to salad and enjoy.
