Recipes to Eat Your Way to Amazing Skin

Nutritionist Peggy Kotsopoulos shows us some delicious recipes that will not only taste great but keep our skin beautiful!

1) Glowing Skin

Salad with lime wedges, walnuts, avocados, and watermelon.

The Glow Salad

This tasty salad uses foods high in water content and healthy fats to make your skin glow and feel beautiful!

For the Salad: 

  1. Medium-dice two cups of watermelon
  2. Slice and halve a cucumber and an avocado to make two cups each. 
  3. Add them to a large bowl and drizzle over two to three tablespoons of olive oil, and the juice of half a lemon. 
  4. Sprinkle over half a cup of toasted, chopped walnuts.
  5. Add salt and pepper to taste. 

Serves 4

2) Anti-Aging/Wrinkle Prevention

Smoothie made with matcha powder, blueberries, and spinach.

Blue Smoothie

This smoothie is full of antioxidants, which are key to preventing wrinkles.  Antioxidants repair and neutralize cells that have been damaged through time or wear and tear — the results, beautiful skin. 

For the Smoothie:

  1. In a blender combine two cups of coconut water, two cups of spinach, half a cup of wild blueberries (fresh or frozen) and one tablespoon of matcha powder. 
  2. Blend until smooth. 

Serves 2

3) Good Skin Tone

Strawberry Frozen Dessert

This three-ingredient recipe not only tastes great but is great for your skin! The plant based saturated fats in coconut help strengthen cellular integrity and skin tone. Silica in strawberries helps strengthen connective tissues, and vitamin C is required for collagen production which acts as the skin’s foundation and determines firmness; the stronger the collagen, the firmer the skin.

For the Dessert:

  1. In a blender add two cups of hulled strawberries and one can of coconut milk. Puree until smooth. 
  2. Hull and quarter one extra cup of strawberries and divide evenly among popsicles moulds. 
  3. Pour in coconut-strawberry mixture over top. 
  4. Freeze for at least four hours or until frozen. 

Makes 6-8 servings (depending on size of mould)

4) Prevent Acne

Salad with pumpkin seeds, romaine lettuce, and roasted sweet potatoes.

Fresh Face Salad

This sweet potato salad with pumpkin butter dressing has ingredients to help prevent acne. The keys are zinc, antimicrobials and vitamin A which all help to prevent or reduce acne. 

For the Salad:

  1. Scrub the skin of one large sweet potato, then halve and slice it just under one centimetre thick. 
  2. Roast in the oven at 375 F with your favourite spices, salt and pepper for 30-40 minutes or until tender and browned. 
  3. Add four cups of chopped romaine lettuce to a large bowl. 
  4. In a small bowl combine the juice of one lemon, three tablespoons of melted coconut juice and a quarter cup of softened pumpkin seed butter. Season with salt and pepper to taste.
  5. Add roasted sweet potatoes on top of romaine, drizzle on dressing and sprinkle on pumpkin seeds. 
  6. Toss and re-season if needed.
