Paleo Apple Almond Muffins


Nutritionist Melissa Ramos shares with us one of her favourite recipes that follows the Paleo diet. These are delish!



2 1/2 cups almond flour
1 cup grated carrots
3 eggs
1/2 cup applesauce
1/4 cup melted coconut oil
1/4 cup honey or maple syrup
1/2 tsp baking soda
1/4 tsp sea salt


Preheat oven to 350.

Combine all ingredients together and put into lined muffin tin. Bake for 20 - 25 minutes, or until golden.

*Please note these don't rise too much since they're gluten-free.
