We're happy to announce the winner of our Great Canadian Recipe with OKA Cheese Contest is Derek MacCuish's Sweet Potato and OKA Cheese 'Pizza'! This winning recipe is an easy main you can whip up any night of the week. Either make it just as you see here (we thought it was delicious) or choose toppings your family prefers. Just be sure to keep Derek’s helpful hint in mind, “this pizza is best eaten with a knife and fork.”
1 large sweet potato, peeled and grated
1 tablespoon flour
2 tablespoons olive oil
1 small onion, thinly sliced
1 garlic clove, minced
2 cups kale, chopped
1/4 cup black olives, chopped
1 can artichoke hearts, drained and chopped
1/4 cup sun-dried tomatoes
1/2 cup grated OKA cheese, add one full cup for a cheesier pizza
Pre-heat oven to 400 F.
Mix together sweet potato, flour and a pinch of salt.
Spread mixture on an oiled cookie sheet to a thickness of about half an inch and bake in preheated oven for 15-20 minutes.
Heat olive oil in pan, add onions and fry until soft (about three minutes).
Add garlic, spinach, olives, artichoke hearts, sun-dried tomatoes and heat until kale wilts.
Cover sweet potato crust with half of the OKA cheese, add the topping mixture and sprinkle with the remaining OKA cheese.
Bake again for 10 minutes until cheese on top is melted and golden.
Slice into servings and enjoy!
