1 1/2 cup spinach
10-12 fresh chives
10-12 fresh basil leaves
1 tsp salt and pepper
2 tbsp butter
8 slices smoked ham
1. Blanch the spinach and squeeze out the excess water from the spinach.
2. Using a blender or food processor, puree the spinach with the eggs, fresh herbs, salt and pepper until smooth.
3. Melt 1 tbsp of the butter into the hot pan and fry the slices of ham until golden in colour.
4. Over medium heat, add the remaining butter then add the egg mixture once the butter has melted. Gently stir the eggs constantly using a heatproof rubber scraper or a wooden spoon. Once the eggs have set and cooked to a moist, light and fluffy texture, place onto the cooked ham.
