No-Bake Chewy Chocolate Peanut Butter Drops

When you need a fast treat for lunchboxes, these can be stirred and dropped while the kids eat breakfast or get dressed — or make a big batch on the weekends; they keep well so can be stored and dipped into all week. (Ensure peanut butter is allowed if you’re sending them to school, or use a peanut butter substitute, such as Wowbutter. If they’re not allowed at school, they make a great after-school snack.) If you like, stir in some extra ingredients, like dried fruit, coconut, bashed up pretzels or roasted, salted peanuts (omit the salt in the recipe) for a salty-sweet treat.

  • 1 cup packed brown sugar
  • 1/2 cup smooth peanut butter
  • 1/4 cup milk
  • 1/4 cup cocoa
  • 2 cups old-fashioned (large flake) oats
  • 1/4-1/2 cup dried fruit, coconut or other additions (optional)
  • pinch salt

In a medium saucepan, bring the sugar, peanut butter, milk and cocoa to a simmer - it will be thick, but stir it until it’s melted and bubbling around the edges. Remove from the heat and stir in the oats, salt and any other ingredients you want to add. Drop by the spoonful onto a parchment-lined baking sheet and let sit at room temperature or refrigerate until firm.

Makes 1 to 1 1/2 dozen balls.
