Cooking with Joy: Key Lime Pops

This frozen treat screams summer but we wouldn’t blame you for making it year-round. It’s thickened with coconut milk and — surprise — avocado. (Just when you thought you’d seen avocado in everything!)
Key Lime Pops

- 1 can (14 oz/400 ml) coconut milk
- 1 ripe medium avocado, peeled and cubed
- Juice of 2 limes
- ¼ cup light maple syrup
Shake can of coconut milk until you hear the milk change from solid to liquid. Place all ingredients in a blender or food processor and process until well combined. Pour into popsicle molds and freeze for at least 6 hours or overnight. If you have trouble removing the popsicles, run the mold under lukewarm water.
Servings: Makes 4-5 popsicles, depending on how big your popsicle molds are.
