Recipe: Shahir's Korean Grilled Cheese Sandwich

Ever get a hankerin' for a snack at midnight? Shahir does, and he is serving up his delicious Korean-style Grilled Cheese Sandwich which is perfect after a night of debauchery.

Ever get a hankerin' for a snack at midnight? Shahir does, and he is serving up his delicious Korean-style Grilled Cheese Sandwich which is perfect after a night of debauchery.

Ingredients

  • 1 tsp gochujang
  • 2 tbsp mayonnaise
  • 2 slices white bread, pre sliced
  • 1 cup old white cheddar, grated
  • ½ cup kimchi, chopped
  • Creme fraiche or sour cream for dipping
  • 1 tsp Korean chilli flakes
  • 1 tbsp green onion, sliced

Preparation

Layer cheese between 2 slices of bread.

Mix mayonnaise and gochujang together in a small bowl.

Spread onto 1 side of bread. Add sandwich to a non stick pan on medium high heat mayonnaise side down, then spread mayonnaise mixture on bread side facing up.

Cook about 2 minutes until bottom is browned. Flip and cook for another 2 minutes or until browned. Slice sandwich into 2 inch sticks (soldiers).

Combine creme fraiche, chili flakes and green onion in a small bowl to use for dipping. Enjoy!

Servings: Makes 1 grilled cheese
