Recipe: Shaved Brussels Sprouts Salad
If you are bored of serving plain old mixed salad, this is the recipe for you
The sprouts can be shaved and dressed ahead of time — they're super hearty, so they can sit in the dressing for a few hours before your guests arrive.
- ¼ cup extra virgin olive oil
- Zest of 1 lemon
- Juice of 2 lemons
- ¼ cup grated Parmesan cheese
- 2 lbs brussels sprouts
- Salt (to taste)
- Pepper (to taste)
Mix lemon juice, zest, olive oil and grated parmesan cheese in a large bowl. Set aside. Trim ends off of brussels sprouts, with a chef knife or in a food processor shave brussels spouts. Toss in dressing. Season with salt and pepper.
If making ahead, mix dressing, shave brussels sprouts and don’t combine until before serving.
