Signature baked good: "My chocolate salted caramel cake, it just tastes amazing."
Is baking an art or a science? "It's an odd little dance of both. It's science in that if you don't have the ingredients in the right amounts, it could very possibly just not work, but of the same token, you kind of have to be creative enough to push the boundaries"
Butter tarts, raisins or no raisins? "Oh, raisins! My husband calls them 'Satan's fruit,' but there are raisins."
Jay is originally from Indiana and grew up in a big family with five sisters and one brother. He discovered his love of baking while living in Sweden as an adult. Despite his large hands, he's skilled at highly decorative work and loves to share his baking with his husband and colleagues. When he's not baking, Jay enjoys spending time with his family, as well as managing one of Canada's first gay rugby teams. He looks forward to presenting his elegant European-style baking this season.
